Abstract

This study was carried out on 100 cooks and meal service waiters, of which half of them were chosen as experimental and others as control groups, working in cafeteria and main kitchen of Hacettepe University Hospital. Ali of the subjects were males and primary school graduates.

The knowledge of the subjects on personal and kitchen preparation area hygiene were investigated before and after education. The differences betvveen the scores of control and experimental groups were found statistically significant.

Level of knowledge of the cooks and meal service waiters were found similar and successful changes on the behavior of the subjects were observed after the education. As a result it was recommended th at cooks and meal service waiters must be educated and controlled continuously.
