A Research on the Mineral Content of Some Biscuits and Biscuit-Like Cereal Products Produced in Turkey

This study was done on total of 38 samples obtained from three different companies. Total aslı contents, maero (P, Ca, K, Na) and miero (Cu, Mn, Fe, Zn) mineral contents of samples were determined. The total ash contents of samples were found to be significantly different bet\veen companies and products (p< 0.05, p< 0.01). The total ash contents o f samples provided by three companies were found between the range of 0.7350 ± 0.0718 and 2.7240 ± 0.1313. Macro and nıicro mineral contents o f products were found to be significantly different depeııding on companies and products (p< 0.05, p< 0.01). Macro and micro mineral contents of samples are expressed as % and ppm, respeetively. The results are found as follows: P: 0.1962 ± 0.1538, Ca: 0.0076 ± 0.1715, K: 0.1629 ± 0.0707, Na: 0.4447 ± 0.3017, Cu: 2.1855 ± 0.9562, Mn: 7.4333 ±4.0193, Fe: 25.4677 ± 29.9738, Zn: 6.5562 ± 2.7819. A positive correlation was found between total ash contents and Mn, Zn, P, Ca, Na, K contents of the samples. There was a ııegative correlation between Fe and Zn, K, Na; Zn and Ca; Cu and Na contents o f the samples (p< 0.05). However a positive correlation was observed between Cu and Mn, Zn, P, K; Mn and Zn, K, Na, Cu; Fe and Ca; Zn and P, K; P and Na contents of the samples (p< 0.05, p< 0.01).
