Abstract

The meals, «Etli mantı» (ravioli with meat), «Kurşun aşı», «Cevizli peynirli makarna» (macaroni with cheese and hazelnut), «Tennuri Çorbası» (soup of Tennuri) and «Yaş tarhana çorbası» (wet ta rh an a soup), which are mostly made of cerea's and by adding yo'rhurt, cheese, meat, lentil and chicken-peas were evaluated, according to their nutritional values and protein qualities. It has been fcund out that each portion of these meals contain energy between 156 and 381 calories and p rotein between 5.8 and 14 g. The cereal dry-beans, meat, voghurt and cheese increase th e ir protein qualities an^. each of thern make un fo r tbe essential amino acids which the otheroT»e 'd o ssn ’t bave. T^e NDP calorie percentaffe of these meals are between 118 and 8 3 . this makes them suitable according to the protein amount and quality, even for children.
