Abstract

In this study incidence and contamination levels of aflatoxins and ochratoxin A in Turkish special wheat product bulgur staple diet of rural population. In most cases home produced was determined. Bulgur samples were collected from 9 cities located in 5 different regions in Turkiye between November 1987 and July 1988. During this period 540 bulgur samples were purchased from retail markets and households and analyzed for aflatoxins B1. B2. G1. G2 and ochratoxin A by AOAC procedures. Aflatoxin B1 was determined in 4 (0.796) samples. The amount of aflatoxin B1 in the samples were 5.4. 7.0. 7.0 and 10.0 ppb respectively. Ochratoxin A could not be determined in any sample.
