Abstract

In this study total of 45 Turkish sunflovver honeys were examined to determine their some composition and accordance with the Turkish food standards. Determined average values in samples are as follovv; moisture 18.43%, acidity 14.35 mEq/kg, pH 3.74, HMF 0.97 mg/kg, reducing sugars 80.81 %, sucrose 3.16%, mineral content 0.34 % and diastase number 17.97. Because of the fact that sucrose content in 8 samples are high, these are out of the Standard. This situation probably results from addition of commercial sucrose. Early harvest is thought another affective factor.
