Abstract

Tarhana contain high quality protein and its digestibility is high. Because of these properties, it is considered that tarhana is a very useful protein source for weaning children and also adults who require much protein in diets. In this survey, we investigated the protein levels of commercial and home made tarhana samples. The levels of protein in commercial tarhana samples vvere betvveeıı 3.4? and 7.95 g/100 g, and the levels of protein in home making tarhana samples were betvveen 17.60 and 17.80 g/100 g. We also deve loped and produced 5 tarhana formulas in our laboratories vvith commercial technological procedures. Protein levels of the forcnulas vvere found 12.22, 12.37, 14.35, 17.68, 18.31 g/100 g, respectively When the results vvere compared vvith Tarhana Standard (TS2282), the values vvere found resemble vvith the Standard. Amino acids contents of these formulas vvere considered to meet the protein requirement of children and adults.
