Abstract

Epidemiological studies indicate a significant relationship between nutrition and cancer risk. Food may contain components that are not only inert for health but also toxic organic compounds. Polycyclic aromatic hydrocarbons are one of these toxic substances. Huma? ıs can take these compounds from foods, contaminated air, soil and water. High concentrations of PAHs can contaminate air by the usage of grease oils, gases, coal and wood in order to provide energy. Thus, it may cause lung, skin and bladder cancer s. Another way to get these compounds into the body is especially by consumitıg fatty, smoked and grilled foods. In this article, contamination routes and health hazards of polycyclic aromatic hydrocarbons are reviewed.
