Abstract

The Camel population o f the world is aboııt. 17.500.000. A s mal portion that is about 12000 present in Turkey. Camel milk is used in production o f cheese,butter and other products. The protein content o f camel milk is loweı t han the cow milk.How ever the vitamin.C level is higher. In Camel milk the amount o f essential fatty acids and unsaturated fatty acids espacially the palmitoleic acid is higher than cow milk, but short chain fatty acid level is lower.
