It has been reported that people on gluten-free diet may have some nutrient deficiencies such as protein, dietary fiber, vitamins and minerals. Due to the high energy and fat content of gluten-free foods, body weight gain may occur instead of loss after compliance with gluten-free diet. In addition, due to the high fat content of gluten-free foods, caution should be taken for cardiovascular risk factors. In order to prevent nutrient deficiencies that are common in gluten-free diets, care should be taken to consume naturally gluten-free and nutrient-rich alternative cereals, fiber and many nutrients-rich vegetables, fruits and legumes.
